Everything You Need to Know About the Brava Chef’s Pan: Modes, Uses, and Top Recipes

If there’s one Brava accessory you’ll reach for again and again, it’s the Chef’s Pan. With generous capacity, it’s perfect for big-batch meals and key to Brava’s Slow Cook and Rice Cook modes—delivering tender braises, hearty stews, flavorful casseroles, and perfectly fluffy rice with minimal effort. Let’s explore what makes it essential, from cooking modes to recipes that showcase its versatility.

What Is the Brava Chef’s Pan?

The Chef’s Pan is our signature enameled cast iron dish with a Brava-safe lid. Bake bread and casseroles, make rice, and slow-cook soups or fall-off-the-bone meats. Available in the Brava Glass and Chef’s Choice sets or sold separately, it has a 3.5-quart capacity and comes in a beautiful red finish.

The Cooking Modes the Chef’s Pan Unlocks

Each Brava recipe tells you which accessories to use and when. You’ll exclusively use the Chef’s Pan for our Slow Cook and Rice Cook modes, as well as for preprogrammed recipes that braise. You can also take it off-script: follow a favorite recipe from a cookbook or the web and use the Chef’s Pan in manual modes like Bake for casseroles, pasta bakes, or whatever you’re craving.

Let’s dive in:

  • Slow Cook Mode: Make tender, braised dishes like lamb shanks, short ribs, or pulled pork—without tying up your stovetop or oven. This mode functions just like a traditional slow cooker, so you can follow any slow-cook recipe you find online by matching the temperature and cook time. Like a conventional slow cooker, Brava offers two temperature settings—Low and High. When the cycle ends, Brava automatically stops cooking (and your food will stay warm in the Chef’s Pan for a while—pretty nifty!).
  • Rice Cook Mode: Even professional chefs have a hard time making a perfect pot of rice. We’re here to help! Say goodbye to scorched pots and guesswork. With the Chef’s Pan, Brava cooks rice and grains perfectly at the press of a button—no babysitting required.
  • Sear & Braise Recipes: Place the pan in Brava, and the top and bottom lamps sear from both sides before shifting to a low-temperature bake or slow cook. It’s like searing in a Dutch oven, then letting it simmer for hours—but easier and babysitting-free. The combo of a good sear followed by the slow cook develops deep, complex flavor.
