Rastelli products are frozen when you open your box, and for a good reason! Rastelli’s ships meat and seafood frozen because you can keep them longer and you don’t have to cook them immediately upon receipt. Let’s explore a few best practices for handling and cooking previously frozen proteins: 

1. Fully thaw frozen meat and seafood before cooking. We recommend thawing for 24-48 hours in the refrigerator because this is the safest thawing method. The food is always cold and never enters the “temperature danger zone” of  40°-140°F, where bacteria can grow and thrive. 
2. If you need to quickly defrost meat or seafood, do so under running water. Keep protein in its original vacuum-sealed plastic packaging, and place it in a bowl in the sink under slowly running water for 30-60 minutes. The thicker the protein, the longer it will take to thaw. 
3. Pat protein dry with paper towels before cooking. Thawing frozen proteins releases some water content, so it’s important to thoroughly pat dry. Otherwise, that excess moisture may prevent the protein from browning properly. Remember, excess surface moisture will convert to steam, and nobody wants a steamed steak! 
4. Season liberally with kosher salt just before cooking. And don’t be afraid to season with some flakey finishing sea salt after cooking, too!
