Community Spotlight: In The Kitchen With Pat Choi

Brava has become an integral part of many delicious moments in our community members’ kitchens and we love to see it. Our community shares custom cook recipes and hacks that inspire not just other Brava community members but even our own culinary team when developing new recipes. We sat down with Pat Choi to get the scoop on her favorite recipes and tips for every new Brava user. Whole steamed fish, Korean Short Ribs, and Seared Scallops and Gnocchi in Truffle Cream Sauce? Yep – these are all Brava dishes from Pat. Keep reading to get the details and to learn her Brava hacks.

Q:  Tell us about yourself! What’s your background with cooking?

A: I love eating and cooking and looking at restaurant menus! I thank the day my daughter gave me the Brava. I took a couple of basic cooking classes when I got married in Hong Kong. Now I mostly look at YouTube and search online for inspiration.

Q: How has your life changed since using the Brava?

A: [Before Brava I needed] lots of different appliances for different uses, like an oven, toaster, steamer. All kinds of pots and pans and woks! …Everything seems easier to make in the Brava, less cleanup time, food done faster. [Brava is] an all in one appliance. I can steam, bake, sear, stir fry, air fry, deep fry, dehydrate all in one machine.

Q: Describe the moment you realized that Brava was actually working to solve a problem.

A: I was so happy when I realized I can so easily steam a whole fish so quickly and efficiently without using a big pot or wok.

Q: What’s your favorite thing to cook in the Brava so far? 

A: Pizza!

Q: What are your favorite Brava hacks and cooking tips?

A: I like using the square pan and the loaf pan to cook vegetables.  When you sprinkle in some water and seal it up with a foil lid, the steam inside will cook the food fast.

Q: What’s your favorite Brava manual mode?

A: REHEAT!

Q: Any tips for new Brava users?

A: Don’t get frustrated. …once [you get] the hang of it you’ll really love it!

Q: Do you have a favorite custom cook that you’ve published?

A: I have published a few custom cooks mainly for my daughter to cook. The Chawanmushi is my favorite.

Q: What can we expect to see you make next in the Brava?!

A: I have a long list that I am planning to make. For tonight’s dinner, Short Ribs!
