Brava Employees Hack Chocolate Chip Lava Cookies with Custom Cooks!

Once you feel comfortable cooking with Brava, you can develop your own recipes using the Custom Cooks feature. Recently, our staff developed a batch of new recipes, including Crème Brûlée and these Chocolate Chip Lava Cookies. Once you get the hang of our preset recipe programs (that were developed by our Recipe & Development team), you can create your own recipes and share them with others on Brava’s Facebook Community.

Inspired by the success of the Molten Chocolate Cake, this Brava team wanted to riff a chocolate chip cookie version using the Salted Chocolate Chip Cookies recipe on Brava and the Egg Tray. In other words, they developed a recipe for large, deep-dish chocolate chip cookies with a crunchy exterior and oozy interior. It took a few tries — but the team successfully developed a Custom Cook that they feel confident Brava owners will adore.

Here is how the team developed the recipe. First, they had to discover the ideal amount of dough to fill inside the Egg Tray. 1/3 cup proved to be just right — the dough expands as it bakes without overflowing out of the wells. Spraying the measuring cup and a rubber spatula with nonstick spray helps to transfer and flatten the dough into the wells without sticking. They used Brava’s Salted Chocolate Chip Cookies recipe (adding 1 teaspoon of vanilla extract), but you can use your favorite cookie recipe or even pre-made, refrigerated dough.

Next, they experimented with the time and temperature of the bake. 13 minutes at 350°F resulted in fully baked cookies with a slight chewy interior. There are two essential steps: allow Brava to fully preheat before adding the tray (this takes roughly 4 minutes) and rotate the Egg Tray 180 degrees during the pause step for even browning and baking.

Letting the cookies cool for a few minutes in the tray before scooping them out with a spoon will ensure that they coagulate slightly and won’t break apart upon transferring to a tray. If you’re feeling extra fancy, you can serve the warm cookies with ice cream, toasted and crushed walnuts, and roasted Raspberries (made in the Brava, of course).
